Afgan polau  || mutton dome biriany || Goat kacci biriany || bangladeshi biriany recipe || recipe no : Tf#5:


2 pounds or 900 kilograms goat meat/mutton approximately

2tsp salt, taste to salt
2 tsp sour yogurt
1/4 tsp oyster sauce optional, sugar 2 tsp optional
2 tsp garlic paste
1 tsp onion powder/paste
2 tsp roasted green black cardamom , chinamon, bay leaves mix powder
3 tsp roasted cumin powder
1/8 tase black peppers
1/2 tsp white peppers
3 tbsp ghee/butter
2 tbsp almond nutes
2 tbsp cashew nutes
golden raisins 1/4 cup
carrots 2 cups/ you can reduce carrots no more( Julian cuts)
3 bay leaves, 6 green cardamom, 2-3 black cardamom, chinamon stick 2 split
cloves 5 pices
3 cups onion
2.5 cups little warm water
Basmati rice /long grains rice 3 cups
12 cups water for boil rice
1 tsp ghee for boil rice
Mawa/khoya 2 tbsp
Saffron milk 1 tsp
Aloobukhara 5-10 taste to aloobukhara optional
Green chilli 5-10 (pices uncut)

Let's get started :  First of all take a bowl marinations for meat then Add 2 tsp salt, 2 tsp sour yogurt , 1/4 tsp oyster sauce ( this is optional ), 1 tsp garlic paste, 1 tasp  onion powder/paste, 1 tsp roasted green black cardamom, chinamon, bay leaves mix powder, 1 tsp roasted cumin powder, 1 tsp mix corianders cumin powder, 1/8 tsp black peppers, 1/8 tsp white peppers and mix them very well then keep aside for minimum 1 hour marinate. After marinations add in a pan 1 tbsp ghee with medium heat, add almond nuts, cashew nuts , golden raisins stir them for 1 minutes medium flame then remove in a plate and keep aside. Then same  pan add 1- 2 tsp ghee, add 2 cups Carrots , 1 tsp sugar then fry/stir them 3-4 minutes with high flame and remove carrots in plate. After then add 1/2 cup oil in a pan with high flame, bay leaves, cardamom, chinamon, clove, 3 cups onion, 1 tsp sugar after added them stir onion  until brown colors. Add marinations goat meat ( don't use water when stir meat) then stir them continuously with high flame and 1 tsp garlic paste 1 tsp roasted chinamon, cardamom, bay leaves  cloves mix powder, 1 tsp roasted cumin powder, mix everything together and stir continuously until brown colors meat. After get meat brown colors add 2.5 cups little warm water mix well and cover them for 40 minutes medium  flame. After 40 minutes get it check  meat boil then cover for more 5-8 minutes. After then add in a bowl 3 cups basmati long grains rice wash them triple , then take another pan for rice boil, add 12 cups water in a pan with high flame after boil water add 3 tsp salt, add 1 tsp ghee/oil then pour rice in the water carefully and boil 6-7 minutes need to 60-70% boil rice. Then return for another pan for meat after 5 minutes remove cover and keep cook meat medium high flame until rice boil. When 60-70% boil rice then strain rice.Then place fried carrots gently top on the meat ( don't stir ) with low flame add 2 tbsp mawa/ powder milk, half fried nuts, golden raisins, Then added boil basmati long grains rice,  add on the top 1 tsp staffron milk optional , aloobukhara, green chilli, 1 tsp roasted cumin powder and 1 tbsp ghee , after then cover with towel for 20 minutes low flame. After 20 minutes stir rice gently then cover for more 5-10 minutes as you like. After 5-10 minutes turn off flame. And serve to hot delicious biriany ! (Also decorate with fried nuts raisins )!!!
